Into our cellar some of the wines are partially processed into the barrique, a 225-litre wood container. The barrique allows a good wine micro-oxygenation, with releasing at the same time the typical tannin of the wood. The ones we chose for our production are made of oakwood.
It is a wood 2000-litre container; we use it for long aging times as for our Vallée d’Aoste DOP Syrah. That vessel shows to be more appropriate for red wines if compared to the two other ones.
In addition to the barrique, in our processing steps we also use tonneaux. They are bigger container than barrique, and with their 500-litre capacity they favor the micro-oxygenation of the wine, but with a lower release of tannin if compared to the wood vessels.
